This knitting lesson demonstrates binding off 'in pattern', which involves binding off whilst following the established pattern. You'll usually find this method used to create the bound-off edge on 1x1 or 2x2 ribbing, and that's what I show in this video.
The advantage of binding off (aka casting off) 'in pattern' is that the resulting edge blends in so much better with the knitting. Otherwise, you'll likely be using the standard knit bind off technique or similar, which creates a uniform band along the edge.
