Water chicken! Might not sound thrilling, but this gentle Cantonese poaching method is the most reliable path to tender, juicy, perfectly-cooked chicken. Chris also happens to be a huge proponent of boiling in water, a topic that comes up surprisingly frequently.

Here's why it works: water never gets over 212 degrees, so you can control the cooking temperature perfectly by keeping it at a sub-simmer around 180-185. An oven's a mess because you never know what temperature it is inside, but with this method, you get succulent, moist, tender chicken every single time.

It’s also an incredibly efficient method for sauce. Reserve some of the flavored liquid and mix with fresh aromatics and seasonings.
