In this walkthrough, I show you exactly how to make the coffee oil, how to fat-wash with cacao butter, and how to build the final cocktail at home. The process starts with making a clarified coffee oil using ground coffee and neutral sunflower oil. After blending and infusing, the mixture is slowly filtered in the fridge for 24 hours to keep the flavors bright and clean. Once the oil is ready, we combine Plymouth gin, mezcal, the coffee oil, and melted cacao butter in a sous-vide bag. Cooking the mixture at low temperature helps the flavors bind to the spirit. After freezing the bag overnight, the solidified oils separate cleanly and we filter the mix again to achieve a crystal-clear, coffee-packed spirit that stays shelf-stable.
With the spirit ready, we build the White Coffee Negroni using Luxardo Bitter Bianco, Tximista Blanc vermouth, and a touch of fino sherry for dryness and balance. The result is a drink that carries the structure of a white negroni but with added depth from the roasted coffee and a subtle chocolate roundness. It is aromatic, complex, and balanced, and it avoids the extra sweetness that white negronis sometimes have thanks to the bitterness of coffee.

White Coffee Negroni
Coffee Oil (Rich Wood Method)
100 g ground coffee
200 ml neutral oil (sunflower)
Blend the coffee and oil for one minute and refrigerate for six hours. Filter through a paper towel and return the first 20 ml to the filter. Let the mixture drain in the fridge for 24 hours. This should yield about 120 ml of coffee oil.
Coffee and Cacao Fat-Washed Spirit
350 ml Plymouth gin
150 ml mezcal
120 ml coffee oil
12 g melted cacao butter
Combine everything in a sous-vide bag and cook at 55 °C or 131 °F for two hours, mixing the bag twice during the process. Cool to room temperature, then freeze overnight. Filter the next day through a coffee filter, using a fine mesh strainer to reduce oil contact. Let the final filtration sit in the fridge for a cleaner result. Bottle and store at room temperature.
White Coffee Negroni Cocktail
1.25 oz coffee-washed gin and mezcal
0.75 oz Luxardo Bitter Bianco
0.75 oz Tximista Blanc or your preferred bianco vermouth
0.25 oz fino sherry
Add everything to a mixing glass, fill with ice, and stir until chilled. Strain over fresh ice. A large clear block is ideal. Garnish with a white chocolate disk topped with three coffee beans.
