Is It Worthy? — Season 1, Episode 1
This is the first episode of a new series where I take some of my favorite cocktails from my upcoming book, BYOB — Be Your Own Bartender, and give them the royal upgrade.
And this one felt like the perfect place to start.

Now, the cocktail.
The Business Upgrade is a riff on the Paper Plane: the same bourbon, Amaro Nonino, Aperol and lemon juice, but topped with Champagne or dry sparkling wine.
For those who don’t know, in cocktail jargon, when a cocktail is topped with Champagne, we often call it “royal.” A Kir Royale, for example, is essentially a Kir with Champagne instead of wine.
So “royal” means a little more elevated, a little more classy. And if we’re giving a Paper Plane the royal treatment, upgrading it from economy to business class seemed like the obvious move.
Hence, The Business Upgrade.
The Business Upgrade — 1 drink
½ oz bourbon
½ oz Amaro Nonino
½ oz Aperol
½ oz fresh lemon juice
2½ oz Champagne or dry sparkling wine
Shake the bourbon, Amaro Nonino, Aperol and lemon juice with ice. Strain into a coupe, then top with 2½ oz Champagne or dry sparkling wine.
Garnish with a paper plane.
And yes, it absolutely works.
