This was cooked from its frozen state and because it didn't fit in the pressure cooker, it took a bit longer to cook completely. But this was much easier and cheaper than going out to get drive thru food.

Because of the shape the meal froze in, I used my stack cooker instead of the pressure cooker.

Meal Prep Chicken Curry
4 chicken breasts boneless skinless, cut into pieces
1 onion, sliced
1 box 3.5 oz Golden Curry Sauce Mix Choose your heat. I used mild
Note: I would use a powdered curry mix versus the blocks that we used. It dissolves better.
2 carrots, cut in large chunks (use more if you like)
2 large potatoes, peeled, and cut in quarters
3 cups chicken broth

Place all ingredients in microwave pressure cooker and cook for 30 minutes.

If you want to prep this ahead of time, combine all ingredients and place in freezer safe container. Freeze until ready to cook.
