My mom wanted to make pancit today so she went shopping, came over, and all hell broke loose LOL!
This was my first time being in the kitchen while my mom makes this. Thanks Mom for not beating me while we were Live and not throat punching me while holding a knife.
NOTE: We had to use what we had in the pantry for this recipe so it's not her usual pancit recipe. I also did not cut the veggies the way it should be cut cause I was just winging it. :) If you have chicken bouillon cubes and chicken broth, it'll give it a much richer flavor. But we went with what we had on hand.
You can find rice noodles (pancit bihon) at FilStop online for those of you who don't have an asian market nearby.
This recipe yields 32 cups of pancit.
Ingredients
2 - 16 oz packs rice noodles
1 medium onion, minced
8 garlic cloves, minced
3 chicken breasts, cut in bite sized pieces
5 pork chops cut in bite size pieces
About 3 Tablespoons olive oil
1 - 10 oz bag shredded carrots
5 stalks celery, cut thinly
1 head cabbage, sliced thinly
4 Tablespoons soy sauce (Low sodium, Aloha Shoyu)
Real Salt brand seasoned salt - Season to your taste
Pepper
2-3 teaspoons of Cilantro Mojo seasoning (Link to making your own seasoning blog.tupperware.com/recipes/diy-seasoning-blends/)
Boil the rice noodles in water for about 5 minutes. Drain. Set aside.
In a medium high pan, heat oil, cook garlic and onion until soft. Add meats and cook until all browned. Add vegetables and stir. Cook until veggies are soft. Season with soy sauce and seasonings. Add cooked rice noodles and remove from heat. Mix thoroughly. You can top with chopped green onions and calamansi or lemon wedges.
