Breadcrumb fried eggs...need we say more? This simple, brilliant concept comes from the late Judy Rogers’s iconic dish, in which eggs are fried in breadcrumbs, making for a toasty crust that melds with the whites and keeps the yolks sunny and runny. We add a bit of Parmesan for extra umami and nestle the eggs under a protective layer of loose spinach leaves for extra gentle cooking. Watch our culinary manager Wes Martin whip them up.
