Patatas Bravas are Madrid's answer to hot chips, fried twice and finished with a smoky, spicy sauce that bites back.
This is the Madrid style, not the Barcelona version with aioli on top. Just a glossy, smoky pimentón sauce, no tomato needed. The trick is frying the potatoes twice. First at a lower heat to cook them through, then a rest, then a hot blast to blister and crisp the outside without touching the inside.
The sauce comes together fast. Sweet and hot smoked paprika bloomed in warm olive oil, a touch of flour to bind it, stock whisked in, and a splash of white wine vinegar to cut through the richness. Glossy, pourable, and clinging to every ridge on the potato.
Steam-drying the boiled potatoes before frying is the step most people skip. Don't skip it. It's the difference between crisp and soggy.
