Levels Advisor Robert Lustig, MD, explains how fructose and alcohol cause metabolic damage via the production of uric acid.
Fructose is a sugar. And alcohol is the fermentation of fructose. They both elevate uric acid levels. Uric acid is a compound made in the liver. Fructose metabolism leads to uric acid.
Uric acid:
- blocks nitric oxide (an enzyme that relaxes blood vessels), leading to high blood pressure
- inhibits mitochondrial function
- generates increased fat in the liver
✅ What you can do:
- Limit consumption of fructose (i.e. high-fructose corn syrup and alcohol)
- Limit consumption of purines (found in red meat, organ meats), which drive uric acid
