I wanted to see if you could recreate Mountain Dew Baja Blast at home using real ingredients, so in this video I used data from Mass Spec Everything, who ran Baja Blast through a mass spectrometer and identified the main flavor compounds. Using his breakdown as a guide, I tried to rebuild the soda with natural syrups: cherry, lemon, mint, basil, and citric acid.
Natural Baja Blast Syrup Ratio
Cherry syrup: 40%
Lemon syrup: 30%
Mint syrup: 15%
Basil syrup: 15%
Citric acid: 2.5–3 g per cup of blended syrup
Mix 1 part syrup to 5 parts soda water.
This homemade version isn’t an exact clone, but it gets surprisingly close and is a fun way to understand what gives Baja Blast its tropical, citrusy flavor. If you're into DIY sodas, natural flavor recreations, or food science experiments, you’ll probably get a kick out of this one. ![Buffalo Wing Popcorn
Today I want to show you how to make Buffalo Popcorn. This snack blends the spicy tangy flavor of a buffalo chicken wing with the slightly sweet crispiness of kettle corn. I have to warn you, this stuff is addictive. This sweet spicy salty popcorn hits all of the taste buds and is sure to be a great hit for guests. You can even make this stuff as a gift for the holidays. I honestly don’t know why they don’t make this stuff commercially.

![How to make mayonnaise
Lets talk about how mayonnaise is made. It’s a pretty basic recipe, but I am going to show you two different methods today on how to make it. This recipe is a real lifesaver if you for example need mayonnaise, but you don’t have any. Chances are, you have all of the ingredients to make this stuff laying around already. Additionally, making it yourself allows you to have full control over how it tastes, you can really fine-tune the flavor, or even add additional ingredients.
- One is a super simple method if you have an immersion blender (or any other type of blender), and
- The other is the traditional method of making it by hand, in case you don’t have one.
On top of that, I am going to make a different type of mayo with each method, one with the classic recipe, and the other a Mexican style Mayonesa with lime juice that I came across from my years living in Tucson. This one is perfect for elotes. Lastly, I very every so briefly wanna discuss what is going on here scientifically.
