Jimmy Doherty, Kate Quilton and Matt Tebbutt travel the globe in their quest to uncover more unusual, intriguing and surprising secrets behind the food we eat.
Jimmy's in Seville, looking for the mysterious ingredient that gives marmalade its bitter tang. Each jar of Paddington's favourite spread contains a whopping 60% sugar, and everyone knows oranges are super sweet – so what's going on?
Kate's investigating sustainable fish. She learns that even farmed smoked salmon aren't considered fully sustainable – so what fish can we be eating with a clear conscience? In search of the answer, Kate heads to the unlikely setting of an East London industrial estate, where she meets an entrepreneur who has developed a remarkable eco-system that could revolutionise the future of fish farming.
And Matt meets a man who is trying to turn Britain onto goat meat. Goat milk producers only need female goats, meaning the dairy industry currently has no use for the young males, thousands of whom meet an early end each year as a result. But all that could change if we could develop an appetite for the stuff… so Matt takes to the streets to see how billy goat goes down with the British public.
