I really wanted a simple way to compat reversable recipes, like iron or redstone to blocks, within the same space as my existing sorting slices. This build achieves that - it is about as simple as anything in redstone can be, but manages to both filter an craft compressing recipes in a one wide tilable format.
The trick of using three hoppers into a crafter as a filter came from:

In his design - it essentially watches for the hopper to go over a signal of 12 and then starts a crafting clock for the slice. This allows the hopper to filter five items at once.

This isnt a complete design... but its about as far as Im going to take it and should still be useful for someone out there.
Basically can have up to 14 brewing stands, each with a separate (or same) recipe going, on repeat, as long as the chunks are loaded - there is overflow detection to stop the system if any chests fill up (or water bottles run out), but do need to make sure any active towers are set up to make the same number of potions as otherwise will just brew water potions on the towers that are short. Although these can be manually fed back into the system
Each individual brewing station can also be disabled if a 14 brewing stand system perhaps only wanted to be run with 3 for a given run.
I still havent worked out the right way to start up or shut down the system without wastage - although I recommend only disabling or enabling towers while the system is completely idle (unlike what I did in the video). There is a prime switch that can get it going once enabled - although there is some finesse needed here as well.
