Its fast (hopper speed), its quiet, and its probably one of the simplest encoded multi-item sorters you are likely to see on YouTube. If you want to keep your storage sorted in minecraft but don't want to have to deal with massive or complex redstone, this is the video you need to watch.
Also seen in this video is the design seen on SamosTheSage's channel here: youtube.com/watch?v=4n_HasJGS3E&t=185s - please visit there for what is probably the best reserved slot multi-item I've come accross that works very well in conjunction with not only my encoded sorter but also most other encoded item sorters.
Also show towards the end is a stackable/non-stackable item filter that is also silent and works at hopper speed without worrying about burning out torches.
Sorry, no block by block tutorial, but please let me know in the comments below if this is something that is wanted.
One more thing - this can be made one-wide-tilable in the same way that the RaPsCaLLioN's design is one wide tilable. Rather than interleaving, this design hangs completely to one side of the chests and above anyway, so just build it on the other side. The design pretty much sits above and behind the line of chests anyway.
I've updated the litematic file and validated it works in 1.20.4: elhedran-minecraft-public.s3.ap-southeast-2.amazonaws.com/hopper+encoded+sorter.litematic - it may be a little more compact than what is shown in the video.

This isnt a complete design... but its about as far as Im going to take it and should still be useful for someone out there.
Basically can have up to 14 brewing stands, each with a separate (or same) recipe going, on repeat, as long as the chunks are loaded - there is overflow detection to stop the system if any chests fill up (or water bottles run out), but do need to make sure any active towers are set up to make the same number of potions as otherwise will just brew water potions on the towers that are short. Although these can be manually fed back into the system
Each individual brewing station can also be disabled if a 14 brewing stand system perhaps only wanted to be run with 3 for a given run.
I still havent worked out the right way to start up or shut down the system without wastage - although I recommend only disabling or enabling towers while the system is completely idle (unlike what I did in the video). There is a prime switch that can get it going once enabled - although there is some finesse needed here as well.
