Tortellini Bake
(For a 12” Camp Oven)
Ingredients:
1/3 cup Italian breadcrumbs
¼ cup grated parmesan cheese
1 pkg. refrigerated stuffed tortellini (16-20 oz.)
1 jar marinara sauce (24 oz.)
½ cup veggie broth (or low sodium chicken broth)
1 packed cup fresh spinach, roughly chopped
Directions:
1. Preheat Camp Oven to 375°F using 9 briquettes under the oven wall, spaced evenly in a ring and 18 briquettes on top of the lid in a tight ring, up against the ash guard. (27 briquettes total)
2. In a small bowl, combine the breadcrumbs and parmesan cheese, set aside. Toss together the remaining ingredients in a medium sized bowl and set aside.
3. Oil the inside of the preheated oven or lay down parchment paper as a barrier to protect the seasoning inside the oven. Place the tortellini mixture into the oven. Sprinkle the breadcrumb/cheese mixture over the tortellini and cover the oven with the lid. Bake for 30 minutes, checking at the 15-minute mark. Serve hot and ENJOY this simple, tasty meal!
