Beef Dan Dan style noodles
Serves 4 | Prep 10 mins | Cooking 15 mins
2 tbs hoisin sauce
1 tbs Chinese cooking wine
1 tbs soy sauce
½ tsp Chinese five spice
¼ tsp coarsely ground black pepper
2 tsp sesame oil
500g Coles No Added Hormones Australian Beef 4 Star Mince
2 tsp finely grated ginger
2 garlic cloves, finely chopped
3 spring onions, thinly sliced
½ cup (70g) toasted peanuts, chopped
230g (4 nests) Coles Asia Thick Egg Noodles
1 bunch choy sum, coarsely chopped
Dan Dan sauce:
¼ cup (70g) tahini
⅓ cup (80ml) light soy sauce
¼ cup (60ml) chilli oil
1 tbs black rice vinegar or rice wine vinegar
2 tsp brown sugar
½ tsp Chinese five spice
1 cup (250ml) chicken stock
1. To make the Dan Dan sauce, combine tahini, soy sauce, chilli oil, vinegar, sugar, five spice and stock in a large bowl.
2. Combine the hoisin sauce, cooking wine, soy sauce, five spice and pepper in a bowl.
3. Heat sesame oil in a wok or large frying pan over high heat. Add mince and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until mince changes colour. Add ginger and garlic and cook, stirring, for 2 mins or until aromatic. Add the hoisin sauce mixture and cook, stirring, for 1 min or until sauce thickens slightly. Remove from heat. Add the spring onion and half the peanut. Toss to combine.
4. Cook noodles in a large saucepan of boiling water for 4 mins or until tender. Add choy sum and remove from heat. Drain well. Add to the wok or pan with Dan Dan sauce. Toss to combine.
5. Divide the noodle mixture among serving bowls. Top with mince mixture and remaining peanut to serve.
