Pistachio-filled choc chip cookies
Makes 10 | Prep 15 mins (+ 2 hours 5 mins freezing time) | Cooking 18 mins
1/3 cup (80ml) Coles Pistachio Spread
500g pkt Coles Ultimate 40% Chocolate Chip Cookies Baking Mix
1 egg
40g butter, softened
1. Line a small baking tray with baking paper. Drop heaped teaspoons of pistachio spread on the tray. Repeat to make 10 drops. Place in the freezer for 2 hours or until firm.
2. Preheat oven to 180°C (160°C fan-forced). Line a large baking tray with baking paper. Make the chocolate chip cookie mix, using the egg and butter, following packet directions.
3. Divide the cookie dough into 10 portions. Place a pistachio drop on a portion of dough and roll the dough around the ball to enclose. Place on the lined tray. Repeat with remaining cookie dough and pistachio drops. Freeze for 5 mins.
4. Bake for 16-18 mins or until golden. Set aside to cool on the trays.
