Baffled by a mess of confusing origin stories, we set out to find the true origin of Boat Noodles, the quintessential Bangkok dish that's as much a competition as a meal. And we found help from the most unlikely of places- a boat-noodle-loving taxi driver who turned off the meter and spent his day making sure we didn't miss out on any of the best places to find the dish along the canal where it was probably first created.
