When OTR filmed our first videos on Indonesian cuisine, we received a surprising amount of feedback from locals telling us that the true hidden gem among the 17,000 islands was a place called Makassar, on the southern tip of Sulawesi.

Visiting Makassar, we found ourselves in a city comprised of four local ethnic groups, each with their own traditional specialties and making use of the abundant (and, to an outsider, often bizarre) natural ingredients. A fascinating place where food is an obsession and each dish unravels a new piece of the history of the island world.
