Until the late 1800s, there was no such thing as the standard daily three-meal schedule, and few on the planet began their day with what we'd now call breakfast. And yet- every element that we now take for granted, from bacon and eggs to oatmeal, congee, and coffee- all of them have their own fascinating stories as to how they entered our collective culture and how they ultimately became the linchpins of the "most important meal of the day". In this video we're tracing the history of the morning meal, exploring the signature dishes and diving into how different cultures throughout history have approached the idea and food of breakfast.

Believe it or not- even after many visits to Thailand and after more than a decade of cooking and running restaurants in Asia- it turns out I knew next to nothing about Thai food beyond the stuff we find all over the world. Visiting Thailand, its those very same dishes- som tam, different colored curries, mango sticy rice- that are sold in tourist areas, and it never occurred to me that there might be so much more to the cuisine. But as it turns out...theres an entire world of tastes and flavors that havent yet found their way beyond the borders.
