Ever tried chicken salad made from pulled chicken with a homemade dry rub? and then added in a sandwich with crispy chicken skin? It is heaven!

Enough chicken salad for 6-10 sandwiches - but only chicken skin for 2-4 sandwiches (I add to pieces in each, so I only have enough for two - you can add in some bacon instead :-) )
You will need:
2 lbs of chicken thighs (take the skin off and use for later)
3 tbsp of allround spice
3 tbsp of sugar
1 tsp of salt
½ tsp of cumin
1-2 cups of water - depends on how big the dish is.
1 broth cube (vegetable or chicken)
1 cup of sour cream
½ cup of mayonnaise
1 red bell pepper
1 red onion
The chicken skin + salt
Bread, fresh parsley and cucumber slices.
Oven at 320 F convection or 160 degrees convection and bake chicken for 2 hours (add broth every 20 minutes) and the skin needs 25 minutes.
