This cook is beef short ribs. The two stand alone ribs are Lobels from New York sent to me by Ken & Karen from Heavy Metal Bar-B-Que. The other rack is from a local butcher shop. I smoked them on the Texas Original Offset Pit. I cooked them a little too hot & fast but they still turned out delicious next level tasting ribs. I highly recommend Lobels prime cuts of meat. The marbeling and rendering of the fine grain of fats in the meat produces some of the greatest taste you can experience in beef. Thank you HMB for such a wonderful meal.
Meat seasoned with Kosher Salt, Granulated Garlic, Fresh Cracked Black Pepper. At wrap time, I added salted butter & Tiger Sauce
