Coconut water syrup… but with a light toasted flavor?
Yes. You just need a controlled Maillard reaction, the thing that happens when heat, sugar, and amino acids make warm, marshmallow-y notes (that’s what makes Maple syrup so good).

The trick is: Maillard doesn’t really happen until your syrup hits 115–120 °C.
Before that, you’re just evaporating water (and losing coconut aroma if you overdo it).

Here’s the sweet spot:
Let it cook to 115–118 °C for a light toast.
If you want more, keep it between 115–120 °C, and whenever it gets too thick, add a splash of hot coconut water to loosen it.
Then let it heat back up and repeat if needed.
Go slowly and stop before it smells savory or “soy-sauce-y.”



Recipe

• 500 ml coconut water
• 400 g sugar
• 0.75 g L-lysine

Cook to 115°C.
For stronger Maillard, hold it at 115–120°C with splashes of hot coconut water as needed.
When done, add 150 ml hot coconut water, cool, then dilute to 50 Brix (~250 ml water).
