The Ivory Carajillo. This one is inspired by the flavors of a classic Carajillo and a Dirty Chai, but built like a White Russian. It’s creamy, spiced, comforting and honestly, hyper addictive. I always love a nice cocktail mash-up and this one didn’t disappoint. Cheers!
Chai-Spiced Oat Milk Foam
• 2 cups oat milk (500 ml)
• 0.4 g (3 pods) cardamom
• 1 clove
• 3.5 g Ceylon cinnamon
• 0.3 g (3–4) black peppercorns
• 1 g (≈0.5 tsp) dried ginger
• 0.2 g nutmeg
• 0.4 g star anise
• 3 g Darjeeling tea
• 3.5 tbsp sugar (50 g)
• Pinch of salt
• 1.5 g methylcellulose
• 0.5 g xanthan gum
Instructions:
1. Lightly crush the spices to release their aroma.
2. Heat oat milk with the spices, bring to a gentle boil, then reduce heat and simmer for 5 minutes.
3. Remove from heat, stir in black tea, and let steep for 5 minutes.
4. Strain the mixture, add sugar and salt, stir until dissolved, then cool to room temperature.
5. Blend with methylcellulose and xanthan gum at high speed for 30 seconds.
6. Pour into a cold cream whipper, charge with N₂O, shake well, and refrigerate until cold.
Ivory Carajillo Cocktail
• 1 1/2 oz (45 ml) reposado tequila
• 3/4 oz (22 ml) coffee liqueur
• 3/4 oz (22 ml) Licor 43
Instructions:
1. Stir tequila, coffee liqueur, and Licor 43 together.
2. Strain into a double rocks glass.
3. Top generously with chai-spiced oat milk foam.
