I’ve been playing around with apples and snap peas lately and I ended up with one of the freshest, crispest highballs I’ve made in a while. I’m calling it the Apple Peas Highball, and honestly, it’s a solid 10/10.

The magic really comes from the cordial. It’s bright, green, super aromatic, and the combo of apples + peas works way better than you’d think. I clarified it so it stays beautifully clear but mostly, it’s to ensure a perfect carbonation.
Now full transparency, I don’t have a forced carbonation rig (I wish!), so I used the cream whipper + CO₂ method. It works great, but if you do have a proper rig, absolutely use that instead. It’s going to give you even better, tighter bubbles.
Here’s what I used to make the juice base:
350 g Granny Smith apples
75 g sugar snap peas
1.5 g ascorbic acid
And for clarification: Pectinex at 0.25% of the juice weight.

APPLE–PEAS CORDIAL
For every 300 ml (2 servings) clarified juice, add:
• 24 g sugar
• 1.8 g citric acid
• 0.9 g malic acid
Stir until fully dissolved and keep chilled.

APPLE PEAS HIGHBALL
• 150 ml apple–peas cordial
• 1.5 oz floral gin
• 0.5 oz Poire Williams
If you’re using a cream whipper:
Add everything to the whipper, charge with CO₂, shake 10–15 seconds, vent, charge again, shake, and chill a couple minutes.
Fill a highball with ice, release the pressure, open the whipper, and pour.
Garnish with a sugar snap pea and enjoy
