Recipe – Chaiwallah’s Medicine
Masala syrup
• 250 g Sugar
• 250 g water
• 85 gFresh ginger
• 20 g Cinnamon
• 3 g Cardamom seeds
• 2 g Cloves
Sous-vide at 70°C for 2 hours (mix twice during the process ⚠️ hot).
Chill in an ice bath, then fine strain when bottling.

Chai Scotch
• 200 ml Johnnie Walker Black Label
• 7 g English breakfast tea
Infuse 30 minutes, then strain through a coffee filter.

Build
• 2 oz chai-infused Scotch
• 0.75 oz masala syrup
• 0.75 oz fresh lemon juice
Shake with ice until cold.
Fine strain over ice.
Float 0.25 oz peated Scotch.
Garnish: 3 candied ginger pieces.
