In this video, I’ll show you a simple technique that can take your batched cocktails to the next level. Instead of using plain water for dilution, we’ll use flavored water to add a new layer of complexity to the drink. It’s a small change that can completely transform your cocktails.
To demonstrate the technique, we’ll make two classic cocktails using this batching method:
• A Coconut Water Old Fashioned
• A Celery Negroni made with clarified celery water
You’ll also see how I make crystal clear ice at home using a clear ice machine, which makes serving batched cocktails even easier.

🍸 Recipes (6 servings)
Coconut Water Old Fashioned
12 oz (360 ml) rye whiskey
1 oz (30 ml) simple syrup
2 tsp (9 ml) Angostura bitters
3⅓ oz (100 ml) coconut water
Bottle and chill.
Serve over ice (try coconut-oil infused ice for extra aroma).
Celery Negroni
Cut 250 g celery and blend with:
• 0.1% ascorbic acid by weight
• 1 small ice cube
Strain through a nut milk bag and weigh the juice.
Add 0.25% Pectinex by weight and refrigerate until separation occurs (about 4 hours or overnight).
Filter the clear juice through a coffee filter.
Build the cocktail:
6 oz (180 ml) gin
6 oz (180 ml) Campari
6 oz (180 ml) sweet vermouth
4⅓ oz (160 ml) clarified celery water
Bottle and chill.
Serve over ice with a celery ribbon garnish.
