In today’s video, I’m showing you five next-level cocktail garnishes that will instantly elevate the look and feel of your drinks. These are the exact techniques I use to make cocktails look like they’re coming straight out of a world-class bar, and the best part is that they’re all completely doable at home.
We’ll start with a strawberry-dusted coupe glass, a super simple garnish that adds color, aroma, and a ton of visual impact. Then I’ll show you how to level up your citrus zest game with a beautiful cut that looks far more complex than it really is.
From there, we’re getting a bit modernist with a melon air made using soy lecithin and an aquarium pump — a fun, inexpensive technique that adds a light, fragrant layer of foam to your cocktails. After that, we’ll make a vibrant mint herb oil, perfect for adding a pop of green and a burst of fresh aroma to clarified cocktails and high-end presentations.
And finally, we’ll finish with a stunning pandan coral tuile.

🌿 Recipes From the Video
🍊 Tequila Boulevardier
1.5 oz Reposado Tequila
0.75 oz Campari
0.75 oz Cardamaro
3 dashes Angostura Cacao Bitters
Stir with ice, strain into a Nick & Nora, express an orange zest, and garnish with the elevated citrus twist.
☁️ Melon Air (Cocktail Air)
Fresh cantaloupe juice (or blend + strain through cheesecloth)
1.5% soy lecithin powder by weight
Blend juice with lecithin for 30 seconds. Place an airstone at the bottom of a container, add the juice, and run the pump until a stable foam forms.
Spoon onto cocktails gently.
🌱 Mint Oil (Herb Oil)
85 g blanched fresh mint leaves
125 g neutral oil (MCT, sunflower, or light coconut)
Blanch herbs 20 seconds, shock in ice water, dry thoroughly, remove stems.
Blend with oil until smooth, strain through a nut milk bag, squeeze out excess, and bottle.
Keeps up to 3 weeks in the fridge.
🟩 Pandan Coral Tuile
15 g flour
5 g sugar
65 g water
60 g vegetable oil
2 ml vanilla extract
Pinch of salt
1 ml pandan paste
Blend everything until smooth. Add ~15 ml to a hot pan over medium-high heat.
Cook until the tuile forms a lace pattern and edges brown lightly.
Cool, lift gently, and blot excess oil.
