Tying up some loose knots here.
Desire Eating Demon's kind of like Yuugi - a boss that is designed to deliver OHKO blows , so you need to damage race it down before it can overrun your team. The problems with this fight is that 1) It's extremely fast to make up for the fact that it has 0 SHK resistance, so you're basically expected to SHK lock it, but it's so fast that SHK locking it with anyone other than Orin is difficult, and of course you're just hang out to dry if you don't want to use a SHK user; 2) Its OHKO move isn't guaranteed to target the left spot, so it's RNG whether it decides to eat up your sacrifice or someone vital instead; 3) it has huge defenses (is that even a surprise any more?), and while its low defense is on the physical end, it is only vulnerable to SIL, not HVY, so most characters are hard pressed to deal any damage to it.
Basically, if you have Orin on your team (or is willing to spend Books of Reincarnations to raise her stats enough to fight it), and a few characters capable of hurting it (Monk subclass helps a lot), then you can probably do it at challenge level pretty easily. If not, you can't. Just grind to a higher level so you can do effective damage to it and be fast enough to not get overrun before you do enough damage, I guess.
