Why was this 600-year-old recipe so popular? Why did it go away? And does it deserve a comeback? These are questions Chris Kimball (@cpkimball) is asking about Lemon Posset, once an alcoholic, curdled, Medieval cure-all which evolved into a silky pudding.

It's also, arguably, the easiest recipe of all time. Just three ingredients: cream, sugar, and lemon juice. No eggs, no gelatin, no water bath. The acid in lemon juice curdles heavy cream as it cools, transforming liquid into a set, mousse-like texture and clean lemony flavor.

The original version was invented alongside the growing popularity of fortified wine; you'd mix that with eggs and cream and get a, let's say, "unique" beverage.

The verdict: yes, comeback-worthy! We don't love recipes just because they're easy, but we love that this conjures something elegant from basically nothing.
