Crispy roast potatoes
Ingredients
Potato - any type, enough for your family
Salt to taste
Oil to cover (about 75 mL for each 1kg potatoes)

Method:
Peel and cut potatoes into even sizes, then rinse and soak in cold water
Drain potatoes, then place into a pot of boiling salted water.
Cook until just soft, but still with a little resistance in the centre when pricked with a knife.
Drain, place back into the pot, with the lid on and leave them to 'steam' for at least 15-20 minutes.

Preheat oven and cast iron pan to 450ºF.
After the potatoes have steamed in the pot, cover them in oil and a salt to taste.
Vigorously shake the pot to evenly coat the potatoes in oil and salt.
The shake also breaks up the surface of the potato, leading to a crispier edge.
Transfer the potatoes to the hot pan, and roast them for 15 - 20 minutes.
After 15 - 20 minutes turn them; continue to roast and turn every 15-20 minutes until you are happy with the colour and crispiness.
