Besides regular steamed Hainanese Chicken Rice, there is another popular way of serving the rice. It is called Chicken Rice Balls. It uses two types of rice, long and short grain. The latter is starchier, and it provides the necessary glue to shape the rice into balls. It's also good for portion control. Anyway, give it go when you make the chicken rice.
Chicken Rice Balls
2 Cups of Jasmine Rice, soaked (20 mins), drain well
1 Cup of Short Grain Rice, soaked (20 mins), drain well
3 1/4 to 3 1/2 Cups of Chicken Stock
1 tsp Sea Salt
3 to 4 Tbsp Hainanese Chicken Rice Paste (youtu.be/YXpITM_f8ko)
