This is a Getuk Ubi Kayu/Fried Cassava Fritters recipe. They’re made of tapioca root or also known as cassava together with rice flour, all-purpose flour, sugar, and grated coconut. Then they are shaped into balls and coat with batter and fry until light golden brown. They’ll be crunchy on the outside whilst remaining soft and chewy on the inside.

500 grams Cassava (about 2 Cups)
1 Cup Grated Coconut
1/2 Cup Cane Sugar
A Pinch of Sea Salt

Batter
100 grams Rice Flour
60 grams All-Purpose Flour
1/2 tsp Sea Salt
1 tsp Sugar
A Big Pinch of Ground Turmeric
3/4 Cup of Water

Makes 18 to 20 Cassava Balls
