If you are on my instagram, you know I post a lot of pictures of the various pancakes I make. I even recently did a public youtube post about it. I love pancakes and the way I fix them makes them a huge caloric intake (important for someone who has to eat 4500-6000 calories a day). But pancakes in the traditional sense are not a very healthy meal because its mostly carbs. I offset that by using whey protein powder in them. That gives me the opportunity to have chocolate or strawberry or vanilla or cookies n cream pancakes or whatever other why protein I have. Sometimes I use peanut butter or pb fit as a source of protein. Then, instead of using store bought maple syrup, I top them with one of many types of jellies or jams I make ... such as elderberry, muscadine, strawberry rhubarb, dandelion, redbud, blackberry, raspberry, peach, plum, cherry .... you get the idea.
In this video I did peanut butter flavored pancake mix with strawberry rhubarb jam .... so its like a peanut butter and jelly sandwich only breakfast style.
I have numerous videos of making pancake batter from scratch which is way cheaper than store bought .... but its really simple. This recipe makes 3-4 pancakes that almost fit a full size dinner plate so you can scale it up or down based on your needs:
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1-2 tablespoons of sugar (you can use granulated, brown, honey, or artificial sweeteners too)
enough water to make a batter not too runny and not too thick
Variations:
use milk in place of the water or add some powdered milk
Add 25-30 grams of your favorite whey protein
If you add 1 egg, it turns the basic recipe into waffle recipe
