DOUGH RECIPE (Makes 6 Large Hot Pockets)
1 cup full-fat cottage cheese (blended smooth)
2 cups almond flour
2 cups shredded mozzarella (low moisture)
1 tbsp butter
1 large egg
2½ tsp baking powder
¾ tsp xanthan gum
½ tsp salt
(Optional: ½ tsp garlic powder)
Instructions:
Melt mozzarella and butter together (microwave in 30-sec bursts until fully melted).
Blend cottage cheese until smooth.
Mix almond flour, baking powder, xanthan gum, salt, and optional garlic powder in a bowl.
Add in the cottage cheese, egg, and melted cheese mixture. Stir and knead until a dough forms.
Chill dough for 15 minutes before rolling.
Divide into 6 balls (~100g each), roll into 5x7” rectangles, and fill.
🧀 FILLING #1: Pepperoni Pizza (makes 2)
¾ cup chopped pepperoni
½ cup shredded mozzarella
¼ cup low-carb marinara or pizza sauce
2 tbsp cream cheese
½ tsp Italian seasoning
(Optional: red pepper flakes)
Mix all ingredients and chill before using.
🥚 FILLING #2: Sausage, Egg & Cheese (makes 2–3)
1 lb breakfast sausage, browned
4 large eggs, scrambled soft
¾ cup shredded cheddar
3 tbsp cream cheese
Salt & pepper to taste
Combine all while warm and chill before stuffing.
🥩 FILLING #3: Philly Cheesesteak (makes 2–3)
2 cups shaved steak
1 medium onion, sautéed
½ tbsp butter
¾ cup shredded provolone
1 tsp Worcestershire sauce
½ tsp garlic powder
Salt & pepper
Cook steak with onions, season, then stir in cheese. Chill before use.
🔥 BAKING INSTRUCTIONS
Preheat oven to 375°F (190°C)
Add ~⅓ cup filling to each dough rectangle
Fold and crimp closed
Optional: brush with egg wash or garlic butter
Bake for 18–22 minutes or until golden brown
Cool 5–10 minutes before serving

½ cup heavy cream

Instructions:
Preheat oven to 375°F. Grease a 9×13 casserole dish with butter or tallow.
Cook the meats:
In a skillet over medium-high heat, brown the ground beef until mostly cooked. Remove and set aside.
In the same pan, sear the ribeye slices with butter/tallow until just cooked through.
