Using a satchel throw animation (or any other explosive) can help you skip the enter bike animation, after pressing the fire button then you just need to press the enter vehicle button as fast as possible. Trick found by @tecnovecna
A bike can be converted to its superhandling variant by failing Cutoms Fast Track by exploding one of the vehicles you are supposed to lift with the crane:
