This enemy is difficult to kill at low level, but well worth it for the uchigatana reward. The idea is to dodge his fast attacks while timing your attacks so that they hit him before he's able to attack as he moves toward you. Keep hitting until you're out of stamina when you do hit. His stagger will protect you and the fight becomes far more difficult if you only hit a couple times like you would against many other enemies in Dark Souls. A shield is pretty much useless unless you have a much better one than you usually do at the start of the game. Just wield your weapon with two hands for increased damage.
