What gives eggs their great taste, texture and nutritional value has to do with how they are raised and fed. Not their particular breed or color of their eggs.

In this video, Patrick and Holly, 2 Portlanders, raise a flock of 30 chickens along with 14 other volunteers. This allows the entire group to have fun raising chickens —plenty of eggs to eat and to sell to local residents.

Chickens that are able to forage for part of their meal enjoy a better lifestyle and yield eggs with higher nutrition. You can see and taste the difference. The yoke is a deeper color, the shells tend to be thicker and the texture of the egg is less runny.
