The Best Recipe You’ve Never Heard of is...Brazilian-style carrot cake! This week, Chris Kimball’s making the opposite of American-style carrot cake, in which carrots are grated bits buried by the spices and a thick layer of cream cheese. This is liquified carrots, penetrating the crumb through and through with an almost shocking orange hue.
The flavor is bright and naturally sweet, almost more orangey than carrot; this is because the more you rupture the cell walls of a root vegetable, the more sugars and flavorful hydrocarbons they release.
We call this Brazilian-*style* because it’s a loose riff on bolo de cenoura, which similarly uses the blender and a chocolate topping. We add orange zest to the crumb and OJ to the chocolate glaze, which adds to a chocolate-orange cookie flavor.
