An ah-ha baking tip from our associate editor Ari Smolin! For perfectly rounded, consistent cookies, roll your dough in parchment, then apply pressure at the base with a bench scraper or a straight edge while holding down the sheet. This will form an even log, which you want to then chill til it firms up so that you can slice cleanly with a sharp knife. You’ll get evenly-sized cookies and smooth edges for even cinnamon-sugar coverage. ⁠
