Move toward the shipwreck where the Golden Banana comes out after you win the race and make sure you're moving at full speed. You'll clip through the wall and collect the banana if your angle is correct. Restart the race and you'll be able to get it again. The banana will be in the shipwreck every time, no matter if you've already beaten the race or not.
