This vegetarian asparagus pasta recipe is one of my favorite vegetarian meals. It is so easy to make! Simple but good ingredients. I love the fresh asparagus, tomatoes and mushrooms. The parmesan cheese brings it all together. Hope you enjoy.

INGREDIENTS:
1 pound cooked pasta - I used tri color Penne pasta
1 pound asparagus cut into 1-2" pieces
2 cups cherry tomatoes - cut in half
1 cup quartered mushrooms - cooked in a little olive oil
1/2 cup water or broth
1/4 cup olive oil
1 cup grated Parmesan cheese
3-4 cloves minced garlic
salt and black pepper
olive oil
*Cook pasta according to package instructions.
*Sautee mushrooms in a little olive oil on medium heat.
In a pan on medium high heat add water, asparagus, onions, salt and black pepper and minced garlic.
Stir, bring up to simmer, cover and cook for 2 minutes.
Add pasta and stir to combine.
Add olive oil and seasonings and stir to combine.
Add tomatoes, mushrooms and parmesan cheese.
Cook and stir until tomatoes are heated through and cheese is melted.
Serve.
Enjoy.
