Easy Creamy Thai Red Curry Noodle Soup Recipe | BEST Thai Soup
INGREDIENTS:
4 cups chicken broth - can use vegetable broth to make total vegetarian
1 - 13.5oz can coconut milk
8oz. package of noodles - cooked according to package instructions
1 medium diced onion
1 cup diced red bell pepper
4 large cloves minced garlic
1 tsp. minced ginger
3 Tbsp. Thai red curry paste - more if you like spicy!
2 tsp. brown sugar
2 Tbsp. soy sauce
1 Tbsp. fish sauce
1-2 Tbsp. olive oil
Toppers:
lime
bean sprouts
garden onions
bok choy - blanch
mushrooms - blanch
soft boiled egg
In a pot on medium heat add oil and onions.
Cook and stir for 1 minute.
Add bell peppers. Cook and stir for 3-4 minutes.
Add minced garlic, ginger and curry paste.
Cook and stir for 1-2 minutes.
Add chicken broth and coconut milk.
Turn heat up to bring to simmer.
Add soy sauce, fish sauce and brown sugar.
Simmer for 5 minutes and ladle over noodles.
Apply toppers.
Serve and enjoy.
