THE BEST FRENCH ONION SOUP RECIPE | RESTAURANT FRENCH ONION SOUP
INGREDIENTS:
6 large sliced yellow onions
6 cups beef broth
1/4 tsp. salt
1/8 tsp. 1/4 tsp. black pepper
1/2 tsp. sugar
1 bay leaf
1/2 cup Sherry
8 oz. grated Gruyere cheese
Croutons:
Cubed bread
olive oil
salt
black pepper
*Bake at 350 degree oven for 20-25 minutes or until dry and golden brown.
In a soup pot on medium heat add oil, butter and onions.
Cook and stir for 10 minutes.
Add 1/4 tsp. sugar. Stir and cook for an additional 15-20 minutes or until the onions
have caramelized. Gradually decrease temp to a low medium.
Add minced garlic and stir for another minute.
Add Sherry and stir.
Add beef broth, salt and pepper and bay leaf. Bring up to simmer and cook for 15-20 minutes.
Turn off heat and remove bay leaf.
Ladle soup into baking bowls. Fill 3/4 full.
Add layer of croutons on top.
Sprinkle with lots of Gruyere cheese on top.
Place under high broiler for a minute or until the cheese melts and is bubbly.
Garnish with parsley.
Serve and enjoy.
