Canned Chicken Pantry Meal ~ Chicken Pot Pie with Biscuits

INGREDIENTS:
1 quart of canned whole bone in chicken thighs - 2 cups of meat
2 Tbsp. chicken schmaltz and 2 Tbsp. butter OR 4 Tbsp. butter
4 Tbsp. flour
1 cup diced onions
2 stalks diced celery
1 1/2 cups frozen vegetables
2 medium diced potatoes
2 cups chicken broth
1 cup canned chicken gel
1 cup cream
1/4 tsp salt plus to taste
1/4 tsp. black pepper plus to taste
1 Tbsp. dried parsley
1 tsp. thyme
1 tsp. poultry seasoning
1 can large buttermilk biscuits

In a skillet on medium heat add chicken schmaltz and butter and melt.
Add onions and celery. Cook and stir 2 minutes.
Add salt , black pepper and minced garlic. Cook and stir another minute.

Add flour, stir until incorporated and cook one minute.
Slowly add chicken broth and chicken gel. Cook and stir and bring to simmer.
Add parsley, thyme and poultry seasoning. Stir.
Add frozen veggies and potatoes. Stir, bring to simmer and cook 10 minutes.

Add cream and stir. Add chicken and stir. Remove from heat. Mixture should be
thick.

Spoon pot pie into casserole and top with biscuits.
Bake at 350 degrees for 15-20 minutes or until biscuits are golden brown.

Garnish with parsley.
Serve and enjoy.
