Apple Fritters
(For a 12” Camp Oven)

Apple Pie Spice Ingredients:
½ tsp. ground cinnamon
¼ tsp. ground nutmeg
¼ tsp. ground allspice


Remaining Ingredients:
oil, for frying
½ cup granulated sugar
1 ¼ cups all-purpose flour
2 tbsp. brown sugar
1 ½ tsp. baking powder
¼ tsp. kosher salt
½ cup fresh apple cider
1 large egg
1 tsp. pure vanilla extract
1 large granny smith apple


Directions:
1. Start off by filling the camp oven with oil, so oil is 1 ½” deep. Heat to 350°F.
(If using coals, use one even layer under camp oven)
2. Mix Apple Spice ingredients together and divide in half and set aside.
3. Place a cooling rack onto a baking sheet, next to the camp oven.
4. Combine and mix together; sugar, half of the Apple Pie Spice, in a bowl and set aside.
5. Whisk together; flour, brown sugar, baking powder, salt and remaining half of Apple Pie Spice in a bowl and set aside.
6. Whisk together; Apple Cider, egg, vanilla in a large bowl. Add dry flour mixture to wet ingredients, mixing until combined.
7. Peel and core the Granny Smith Apple. Coarsely grate half the apple and cut the remaining half into ¼” pieces. Gently fold into the batter.
8. Working in three batches, drop 2 tablespoon sized dollops of batter into the hot oil. Fry 2-4 minutes, turning fritters one time, until golden brown.
9. Remove fritters from oil and place on a cooling rack for 1-2 minutes.
10. Toss warm fritters into sugar mixture, shaking the bowl to evenly coat and return to cooling rack.
11. Serve warm or at room temperature and Enjoy!!!

(Total prep & cook time is approx. 30 minutes)
