British Cut Beef Ribs
Barbecued in a Camp Oven
(Made in a 14” Deep Camp Oven, Using an inverted 12” Camp Oven as a lid)
Ingredients:
4 british cut beef ribs
favorite meat seasoning (We use Ted & Barney’s H-3 Seasoning)
favorite barbecue sauce (We use Fogcrawler’s Barbecue Sauce – see previous webisode)
Directions:
1. Place 18 briquettes inside a 14” Deep Camp Oven for the first hour of barbecuing.
2. Place an elevated round grill inside or on top of the oven.
3. Sprinkle ribs with your favorite meat seasoning & place ribs on the grill bone side down.
4. Place an inverted 12” Camp Oven on top of the grill. Place 16 briquettes on top of the inverted oven for the first hour of barbecuing. (Wear leather gloves when handling inverted oven, using care not to spill ashes)
5. After 20 minutes, flip ribs over and cook for 40 minutes.
6. Change coals, reducing inside bottom coals to 16 briquettes & reduce coals on the inverted oven to 15 briquettes.
7. Turn ribs onto an edge & barbecue for 20 minutes, then turn them onto the remaining edge & barbecue for 20 minutes.
8. Remove inverted oven and return the ribs to bone side down. Paint the three exposed surfaces of each rib with your favorite barbecue sauce and grill for 20 minutes uncovered.
9. Serve with dipping sauce, using remaining barbecue sauce.
