This is another offset cook and reverse sear using the Weber Smokey Mountain Smoker with a kettle setup. Today, I'm smoking stuffed porkchops. The recipe for the stuffing is from DJ BBQ channel, and the sauce (a variation of it) came from Michael's Home Cooking channel. Since I had been viewing several channels on stuffed pork chop, I accidentally put the cheese in the sauce. Michael's recipe called to stuff the chop with the cheese & bread crumbs, then sear in pan and make the sauce in the pan, then put in the oven at 400 degrees. (Sorry Michael, I promise to do your exact recipe soon). They turned out great anyway. Cook time on the grill was about one and half hours at 375 degrees offset, then 2 min each side directly over the heat to sear. The sides consisted of Potato Casserole, Broccoli Salad, Fresh creamed corn.

Stuffing Recipe
Cover bottom Pan Olive Oil
2 cloves crushed garlic
1 large onion
1 cup mushrooms
1 cup finely chopped apple
1/2 T Cracked pepper
1/2 tsp Sea Salt
2 C breadcrumbs
1/4 t sage
stir into saucepan and simmer 15 minutes. cutoff and cover

I followed the sauce recipe ingredients, except I put the cheese in the sauce by mistake. Michael's sauce was done in the pan while searing the porkchops, then put the pan chops and sauce in the oven at 400 degrees. I made the sauce in a saucepan and covered. I smoked the porkchops on the smoker, and reverse seared at the end. The sauce was used to top the chops. Was very delicious. Highly recommend.
