This video is to answer the Rib Candy Challenge from Dave at DaBomb Smokes channel. This challenge was started by Kirby at Kirby's FishnGrill channel. The weather is so hot and humid in S.C. with high temps and high humidity, I thought I'd do ribs a little differently to shorten my time outside in the heat. I remembered years ago, we use to do a fast cook on BBQ Chicken by wrapping the chicken in foil, and steaming it on the charcoal grill for 30 minutes, then removing it and then saucing and searing over the charcoal. This is how I decided to do my ribs in the Rib Candy Challenge. They didn't take but an hour and fifteen minutes to completely finish to the table. Also, in the challenge I was required to make my own rib candy sauce, so I put together some sweet and spicy ingredients for the sauce which turned out very good. The rubs used on the ribs were by Heaven Made Products It's Incredible and Amazin Cajun. Also used some GQue The Rub and The BBQ Sauce by Killer Hogs in the Rib Candy sauce.

Janet's Pimento Corn Pudding Recipe
8 ears fresh corn, or 1 pint frozen cream corn,
substitued with can cream corn
4 Tb butter
2 eggs
1 C milk
2 Tb all purpose flour
2 tsp kosher salt
1/2 C pimento paste
Drain 4 ounce jarred pimento
add 1 tsp fresh minced garlic
pulse in blender until pureed
Pre-heat oven to 350
cut corn from cob and milk it if fresh corn. Or use frozen creamed corn or can cream corn. put the butter in a 2 qt casserole dish and melt in pre-heating oven. Lightly beat together the egg, milk, flour, and salt. Add the pimento paste and stir to combine. Then add the corn and stir. Swirl the preheated butter inside the casserole dish and be sure to coat the inside. Pour the extra melted butter into the corn mixture stir and blend together. Pour the mixture into the casserole dish and bake for 30 min until the custard is firm.
Rib Candy Sauce Recipe
1/2 C brown sugar
1/2 C red pepper jelly
1/2 C sweet thai chili sauce
1/2 C honey
1/2 C orange sauce
1/4 C Ketshup
1/4 C Apple cidar vinegar
1 Tb Tiger Sauce
3 Tb Texas Pete
2 Tb Amazon Mango Sauce
2 Tb The BBQ Sauce (killer hogs)
1 Tb The Rub (Gque BBQ)
1 tsp Salt
1 tsp black pepper
1 tsp yellow mustard
1/2 stick butter
