How long can we keep it around?
I know there are various takes on this, but the common sense response is usually - when you're down to the dregs, be kind and kill it off.
But, what if it's something really special? What if it's something you just can't quite say goodbye to? What if you have enough bottles to ensure that a lot of them end up in the same state at a similar time? What if some just get forgotten about?
Well, in looking into this, I may need to confess just how many bottles I'm trying to manage at home right now, but it doesn't need to get this out of hand for this to become an issue. Very often, we're left wondering; just how long will this last?
There's one thing trying your hardest to keep something around, only to discover it's gone of its own accord anyway.
So this week, I'll cover the spectrum: antique and old, peaty, sherried, cherished and forgotten. I'll put dates on how long they've been left to wither and try them, all the while trying to work out if it really matters and what we might do about it.
