SMOKED CHICKEN
Ingredients:
1 whole chicken
1/4 cup dry seasoning*, or more as needed
Pecan Or your choice of wood chips
Turn chicken over so it is breast-side down.
Use kitchen shears to cut out the back bone: .
Starting from the tail end of the chicken, cut along one side of the back bone, then repeat on the other side to remove the backbone.
Flip the chicken so it is now breast-side up. Use the heel of your hands to press down on the breast bone to flatten the chicken. You may hear a crack as you press.
Cover well with seasoning mix
Place in smoker at 225°F for 45 minutes, then increase to 425°F for 45 minutes to crisp skin
Remove from smoker after reaching internal temp of 165°F.
Allow to sit for 5 minutes to redistribute the juices.
* Seasoning mix:
1/2 cup paprika
1/4 cup garlic powder
1/4 cup brown sugar
3 tablespoons black pepper
2 tablespoons chili powder
2 tablespoons onion powder
2 tablespoons salt
1 tablespoon dried oregano
1 tablespoon cumin
2 teaspoons dried thyme
2 teaspoons dry mustard
2 teaspoons ground coriander
1 teaspoon allspice
1/2 teaspoon ginger
Mix all ingredients together and keep in an airtight container/jar till used.
COWBOY BEANS:
Ingredients:
1 can navy beans
1 can butter beans
1 can black beans
1 can cannelloni beans
1 can kidney beans
1-2 cloves garlic, minced
½ medium sweet onion, diced
1 tablespoon Worcestershire sauce
¼ cup dark brown sugar
1 teaspoon yellow mustard
1 teaspoon Worcestershire sauce
1 teaspoon apple cider vinegar
1 teaspoon chipotle sauce
1-2 cups chopped smoked pork (you can substitute bacon or ham)
Drain all the beans and add to a large Dutch oven
Add beans, garlic and onions to dish and stir.
Mix wet ingredients including the brown sugar and spices/powders together and pour over top of beans. Mix well.
Chop up pork and mix into the beans.
Put in preheated smoker (225°F) uncovered
Smoke for at least 1-2 hours.
Stir every 30 minutes or so to distribute the smokiness that collects on top of the beans.
